Functional Mushrooms: A Buyer's Guide to the Six Main Species

Six species account for nearly the whole functional mushroom market: lion's mane, reishi, cordyceps, chaga, turkey tail and maitake. All six are ordinary dietary ingredients. None is scheduled, none is named in the federal temporary-scheduling notices published in the Federal Register on 6 July 2026 (FR Doc 2026-13580 and FR Doc 2026-13581), and none carries the regulatory ambiguity attached to the newer botanical categories.

That makes this the cleanest category we look at — and it means the risk here is not legal, it is commercial. The way you lose money on functional mushrooms is by buying a product that is mostly grain starch with a label that never quite says so. This guide covers what each species is, what part of the organism you should be buying, and the one number on a certificate that separates real material from filler.

What we are not going to tell you

Most buyer's guides in this category are a list of claims. This one is not, for two reasons.

The first is legal. These are dietary supplements, and the only permissible claims are structure/function claims. Nobody may lawfully say a mushroom treats, cures, prevents or mitigates anything, and a seller who does is telling you something about their compliance posture rather than their product.

The second is that the evidence is thinner than the marketing implies. Much of what circulates comes from cell-culture work or animal studies, at doses and in preparations that bear no relationship to a capsule. There are human trials, some of them reasonable, but the honest summary is that this is an area of active research rather than settled knowledge. What we can help with is the part that is fully verifiable: whether the powder in the jar is actually mushroom.

The six species

Lion's mane (Hericium erinaceus)

A genuine culinary mushroom — the white, cascading-spined fruiting body sold fresh in produce markets. It is the most-searched species in the category and the one where the mycelium-versus-fruiting-body question is sharpest, because the two materials contain chemically different compounds: hericenones are associated with the fruiting body and erinacines with mycelium. A product built on one is not a substitute for a product built on the other, and a label that says only "lion's mane 1,000 mg" has told you nothing about which you bought. Reishi (Ganoderma lucidum)

Woody, intensely bitter, and not eaten as food. Taxonomy is unsettled: much East Asian material is properly G. lingzhi rather than G. lucidum, and labels rarely reflect that. Reishi is the clearest case for dual extraction, because it carries two constituent families with different solubility — beta-glucans, which come out in hot water, and triterpenes, which need alcohol. A hot-water-only reishi extract is a legitimate product but it is not the whole organism. Reishi spore powder is a separate article again, with its own specification; do not treat a spore product and a fruiting-body extract as interchangeable.

Cordyceps (Cordyceps militaris)

The most misdescribed species in the category. Wild Ophiocordyceps sinensis, the Himalayan caterpillar fungus, is scarce and expensive enough that it is essentially absent from the commercial supplement supply. Almost every product on a US shelf is either Cordyceps militaris fruiting body, which is cultivated and contains cordycepin as a measurable marker, or a mycelial fermentation biomass. If a label says "Cordyceps sinensis" at a normal retail price, what you are holding is almost certainly a mycelial product. That is not automatically bad, but the label should say which, and the certificate should quantify something.

Chaga (Inonotus obliquus)

Chaga is the exception to the fruiting-body rule, because the material harvested is a sclerotium — the hard, blackened conk that grows on birch — rather than a fruiting body at all. Anyone selling "chaga fruiting body" is using the term loosely. Chaga is also mostly wild-harvested from slow-growing birch stands, which raises real sustainability questions that cultivated species do not. Two practical cautions: chaga is high in oxalates, and published case reports have described kidney injury associated with heavy, prolonged intake, so it is worth a conversation with a clinician before regular use. Beta-glucan content also runs lower than in true fruiting-body mushrooms, so judge chaga on its own specification rather than against lion's mane numbers.

Turkey tail (Trametes versicolor)

Formerly Coriolus versicolor, and one of the most common fungi in temperate forests worldwide. It is prolific and inexpensive to cultivate, which means there is no supply-side excuse for a turkey tail product padded with grain. One thing to watch in the marketing: a specific polysaccharide preparation derived from this species is regulated as a prescription pharmaceutical in Japan. That is a different article, made by a different process, used at different doses and under medical supervision. No US supplement is that product, and a seller who blurs the two is making a drug claim by implication.

Maitake (Grifola frondosa)

Hen of the woods — a culinary mushroom cultivated at commercial scale, which makes fruiting-body sourcing straightforward and cheap. Note that named glucan fractions you may see referenced on labels are specific proprietary preparations with their own manufacturing specifications, not generic descriptions of maitake extract. If a label uses one of those names, ask whether the product actually contains that article or is merely invoking it.

The one number that matters: beta-glucan

Beta-glucans are the structural polysaccharides in fungal cell walls, and they are the standard measure of how much genuine mushroom material a product contains. The number to look for on a certificate is a stated beta-glucan percentage.

The number to be suspicious of is "polysaccharides." Starch is a polysaccharide. A product guaranteeing "over 50% polysaccharides" can be mostly rice or oat starch left over from the growing substrate, and the claim on the label remains literally true. This is the central fraud mechanism in the category and it deserves its own treatment, which we give it in mycelium on grain versus fruiting body. The short version: insist on beta-glucan reported separately from alpha-glucan, and treat a total-polysaccharide figure as a non-answer.

Extraction, and what an extract ratio means

Fungal cell walls are chitinous and poorly broken down by ordinary digestion, which is the argument for extraction rather than raw powder. Hot water extraction pulls out beta-glucans; alcohol extraction pulls out triterpenes and other less water-soluble constituents; a dual extract does both and is the sensible default for reishi and chaga.

Extract ratios are where labels get slippery. A "10:1 extract" means ten units of starting material produced one unit of extract, but it tells you nothing unless you also know what the starting material was. Ten to one from fruiting body and ten to one from grain-grown mycelium are not comparable claims. Always read the ratio next to the plant part, never on its own.

The one landmine in this category

Amanita muscaria is being pushed hard into the functional mushroom channel, usually as gummies, and it does not belong there. FDA lists it in the Dietary Supplement Ingredient Directory and has concluded that it does not meet the federal safety standard for dietary ingredients at FFDCA 402(f)(1)(B); the agency has also issued a warning letter to a manufacturer selling it. Louisiana lists it on its hallucinogenic plants schedule alongside Amanita pantherina, Psilocybe, Conocybe, Panaeolus and Stropharia species.

We screen every mushroom supplier for it, and we audit any supplier that also runs an Amanita line, because shared equipment and shared marketing are both problems. It is excluded on the same reasoning that keeps blue lotus out of the catalogue, which we set out in why we do not carry blue lotus.

What we require before stocking a mushroom brand

  • Latin binomial on the label, not just a common name.
  • Plant part declared — fruiting body, mycelium, or sclerotium for chaga — with the growing substrate disclosed if mycelium is used.
  • Per-lot certificate quantifying beta-glucan and alpha-glucan separately, plus heavy metals, microbials and pesticides.
  • Extraction method and ratio, stated against the plant part.
  • No Amanita products anywhere in the supplier's catalogue without a documented separation audit.

Frequently Asked Questions

Are functional mushrooms legal to sell and buy in the US?

Yes. The six species covered here are ordinary dietary ingredients with no scheduling issue and no adverse FDA ingredient determination. Amanita muscaria is a different matter and is excluded from this category as far as we are concerned.

Is fruiting body always better than mycelium?

Not automatically, and we try to be fair about this. Mycelium is real fungal tissue, and some constituents occur in it rather than in the fruiting body. The problem is not mycelium; it is mycelium grown on grain and sold with the grain still in it. If a supplier separates the mycelium from its substrate and can quantify what is in the finished powder, that is a legitimate product.

What is the fastest way to spot a low-quality mushroom supplement?

Look for a total "polysaccharide" percentage with no beta-glucan figure anywhere, a common name with no species, or a proprietary blend that lists six mushrooms and one combined milligram total. Any one of those means the label is hiding the composition.
